Thyme de Provence
The thyme of Provence or Thymus vulgaris L is an aromatic plant of the family Lamiaceae. Originally from Western and Southern Europe, this perennial sub-tree averages between 10 cm and 30 cm. Presenting in small tufts, it has persistent grey green leaves odorous with garrigue fragrance. A melliferous plant, it gives small flowers whose color varies from white or mauve pink depending on the varieties. The thyme de Provence is used alone or in bouquet with other aromatic plants such as rosemary, laurel and parsley in the kitchen. It also has many interests in herbal medicine.
