White mustard

White mustard is an annual plant of the Brassicaceae family. Growing up to 80 cm tall, the plant has alternate leaves, petiolated and cut into angular lobes. Its yellow flowers are arranged in terminal ears. White grey seeds are known to be rich in oils and vitamins. This particular mustard species supports rich, poor, heavy, light, acidic or basic, sunny or shaded soils. In France, white mustard grows adventitiously in wastelands, crops and fields. Very popular in the kitchen, this condiment accompanies fish dishes well. It is also part of the composition of mayonnaise and dressings.
