Lucerne (Alfalfa)

Also called Grand Trèfle or hay of Burgundy, alfalfa belongs to the fabaceous family. This perennial herbaceous plant, native to North Africa and Asia, is 30 to 80 cm tall. Its roots, on the other hand, can sink to more than 2 metres deep. Alfalfa is characterized by lightly toothed grey green leaves and purple flowers grouped into clusters. The pods, usually curved, are the fruit of the plant. In Arabic, alfalfa would mean "Father of Food". A meaning that can be explained in particular by the rich natural composition of its leaves and seeds. These parts of the plant contain minerals, amino acids, proteins and antioxidants. There are also trace elements, including selenium and zinc.
